Spaghetti Bolognese

Cook Off Winning Spaghetti Bolognese!

Ah! The humble 'Spag-Bol'! Call it whatever you like - Spaghetti sauce, Meat sauce, Ragu - It is a hearty dish and a favorite comfort food for many. Make a big batch of this meat sauce, portion it and freeze it for those days that you just don't feel like cooking and don't really feel like eating out. I have such limited take out options here that this is a common occurrence.  Bolognese sauce freezes really well and generally tastes better the next day if refrigerated.

This recipe is simple but packs a punch. Here's a tip - when in doubt add more garlic. Also, more wine. Definitely more wine!

Yield - Serves 6

Prep Time - 20 Minutes

Cook Time - 1 Hour


Cook Off Winning Spaghetti Bolognese!


Ingredients


1.5 LB Ground Beef
2 Cans Whole Peeled Tomatoes
1 Medium Onion
6 Cloves Garlic
1 Large Carrot
1 Cup Red Wine
2 Tablespoons Ground Dried Porcini Mushrooms
1/2 Teaspoon Dried Oregano
1/2 Teaspoon Dried Basil
1/2 Teaspoon Dried Marjoram
1/2 Teaspoon Dried Parsley
1 Teaspoon Fennel Seeds
Dash Red Pepper Flakes
Cracked Pepper
2 Tablespoons Extra Virgin Olive Oil
Salt 


Method


Season the meat with salt, fresh cracked pepper, dried parsley, basil, marjoram and oregano. Add the dried porcini mushrooms.



In a sauce pan, heat extra virgin olive oil and add the fennel seeds. Add diced onions and shredded carrots. Cook for 4-5 minutes till the veggies start to caramelize. 



Add crushed garlic and continue to cook for 5 more minutes on low heat. 



Add the seasoned meat and break it up mixing it with the veggies.


Cook till the meat is browned. About 4-5 minutes. 



Add the canned tomatoes. Beak them up with the cooking spoon and combine with the meat mixture. Add the wine.


Cover and simmer on low heat for about 40 minutes.



Check and adjust seasoning.


Serve with cooked spaghetti.
